Refreshing Matcha Bubble Tea: The Easy Homemade Recipe
Do you know the feeling? You walk past a bubble tea shop, see the colorful cups, and immediately crave that sweet, cool refreshment. But a glance at the price tag often dampens the anticipation. 7 to 9 francs for a drink is not uncommon. On top of that, store-bought versions often contain extreme amounts of sugar, and you rarely know the actual quality of the tea used.
We have the solution for you: Become your own "Home Barista"! With our recipe for Matcha Bubble Tea, you can bring that café feeling right into your kitchen. It’s not only significantly cheaper, but you also have full control over the ingredients. You determine the sweetness, choose your favorite milk, and use high-quality Matcha. The result is a drink that not only looks fantastic (hello, Instagram Story!) but tastes just as good – if not better.
What actually is Matcha Bubble Tea?
Before we whisk the bamboo whisk, it's worth taking a quick look at the history of this trendy drink. Bubble Tea, also known as Boba Tea, is a drink that originally comes from Taiwan and was invented in the 1980s. The classic version consists of black tea, milk, sugar, and the characteristic black tapioca pearls that provide the chewing fun.
In our variation, we replace the black tea with the finest Japanese Matcha. If you don't know exactly what Matcha is yet: It is green tea ground into a fine powder, traditionally used in Japan for tea ceremonies. Unlike conventional leaf tea, you drink the whole leaf here and thus absorb all the valuable nutrients. The combination of the tart, umami-rich Matcha, the creamy milk, and the sweet, "chewy" pearls makes this drink an absolute highlight.
By the way: If you are a fan of cool Matcha creations, you should definitely try our recipe for creamy Matcha ice cream without an ice cream maker. It is the perfect addition for hot summer days.

- 1-2 tsp Premium Matcha Powder: We recommend our Ceremonial Grade Matcha for the most beautiful color and the best taste without bitterness.
- 50ml warm water: (approx. 80°C, not boiling!)
- 30-50g Tapioca Pearls: (Black pearls, often available as "Quick Cooking")
- 200ml Milk or Plant-based Milk: Oat milk goes particularly well with Matcha.
- Sweetener of choice: Cane sugar syrup, maple syrup, or honey.
- Ice cubes: Plenty of them.
Step-by-Step Preparation
1. Cook Tapioca Pearls:
Bring a small pot of water to a boil. Add the tapioca pearls and cook them according to the package instructions. Usually, with the quick variants, this only takes about 5 minutes until they float to the surface. Important: The pearls must be soft on the outside but still firm on the inside – the so-called "Q" texture.
2. Shock and sweeten:
Drain the pearls and immediately shock them with ice-cold water. This stops the cooking process and prevents them from becoming mushy. Put the pearls in a small bowl and mix them with some syrup or honey so they don't stick together and absorb some sweetness themselves.
3. Prepare Matcha:
Sift the Matcha powder into a small bowl to avoid clumps. Add the warm water and whisk the Matcha with a bamboo whisk (Chasen) or an electric milk frother until frothy, until a fine crema forms.
4. The Layering:
Take a tall glass. First, put the sweetened tapioca pearls inside. Then fill the glass generously with ice cubes. Now pour the milk over the ice until the glass is about three-quarters full. Finally, slowly pour the whisked Matcha over the ice cubes and the milk. This creates the beautiful green-white color gradient.
Enjoy your drink best with an extra-wide straw so the pearls fit through! Our moist Matcha brownies with white chocolate go perfectly with this for the ultimate indulgence experience.
Tips for perfect enjoyment
To ensure your Matcha Bubble Tea tastes truly professional, we have a few expert tips for you here:
- The right water temperature: Never use boiling water for your Matcha. This burns the tea and makes it bitter. 80 degrees Celsius is ideal.
- Avoid clumps: Nothing disturbs the drinking pleasure more than dry powder in the mouth. Sifting the powder before pouring is a small step with a big effect.
- The pearl consistency: Tapioca pearls are divas. If you cook them too long, they become mushy. If you cook them too short, they are hard. The perfect consistency is "chewy" – like a gummy bear.

Frequently Asked Questions
Can I prepare the Bubble Tea vegan?
Absolutely! Matcha Bubble Tea often tastes even better with plant-based milk alternatives than with cow's milk. At Matcharonin, we particularly love oat milk, as its natural sweetness and creamy consistency perfectly balance the tart notes of the Matcha. Almond or soy milk also work excellently.
Where can I buy Tapioca Pearls?
You can find Tapioca Pearls (often labeled as "Tapioca Pearls" or "Boba") in almost every well-stocked Asian market in Switzerland. By now, some large supermarkets also carry them in the international specialties section. Make sure to buy the "quick-cooking" pearls if you want to save time.
Why does my Matcha powder clump?
Clumps usually form if the water is too cold or the powder hasn't been sifted. Matcha is a very fine powder that attracts moisture quickly. We recommend always pressing the powder through a fine sieve into the bowl before adding the water. A bamboo whisk (Chasen) is the best tool to completely dissolve the clumps.
Can I store the Tapioca Pearls?
Unfortunately, no. Tapioca pearls should always be prepared fresh and ideally consumed within 4 hours. If you store them in the fridge, they become hard and lose their great, chewy consistency. If you leave them in liquid for too long, they can dissolve and become mushy. So always prepare only as much as you want to enjoy right now.
We hope this recipe inspires you to create your own Matcha Bubble Tea. It is easier than you think and incredibly fun. If you are looking for high-quality Matcha for your creations, feel free to visit our shop at matcharonin.ch.
